Ingredients
- 1 egg
- 1 cup water
- 3.5 cups all-purpose flour
- Salt
- 250 grams ground beef
- 1 large onion, grated
- Black pepper

- For the Topping:
- 1 cup yogurt
- 2 tablespoons butter
- 1 tablespoon red pepper flakes
- Fresh mint or parsley (for serving)
Instructions for Koca Kulak Mantı
- For the dough, crack the egg into a mixing bowl and add water and salt. Mix well.
- Gradually add flour and knead the dough. Knead until the dough is not sticky and has a soft consistency.
- After kneading, let the dough rest for about 30 minutes. Cover it with a damp cloth while it rests.
- To prepare the ground meat filling, grate the onion and place it in a bowl along with the ground beef, black pepper, and salt. Mix well.
- Divide the rested dough into three equal portions and place each portion on a floured surface.
- Roll out each portion thinly. Adjust the dough size according to your preference.
- Place a teaspoon of the ground meat filling in the center of the rolled dough.
- Starting from the edges, seal the dough tightly. While shaping the mantı, you can fold the corners to create a decorative look.
- Boil water in a pot and add salt to the boiling water.
- Place the prepared mantı in the boiling water and cook for about 10-12 minutes. The mantı is cooked when they float to the surface of the water.
- Once the mantı is cooked, drain them in a colander and remove excess water.
- Prepare garlic yogurt before serving. Whisk the yogurt in a bowl and add crushed garlic. Mix well.
- Transfer the boiled mantı to a serving plate and drizzle with garlic yogurt.
- Melt butter in a separate pan and add red pepper flakes. Slightly heat the mixture until the butter is infused with the flavors of the pepper flakes. Drizzle the hot butter over the mantı.
- Garnish with fresh mint or parsley leaves and serve hot.
