Preparation of Bean Salad

  1. Soak the beans overnight and boil them in a pressure cooker until they become tender (approximately 30 minutes).
  2. Once the boiled beans have cooled down, drain them and set them aside.
  3. Thinly slice the red onion into half-moon shapes and rub them with salt and sumac.
  4. Slice the tomato as desired.
  5. In a bowl, combine the beans, onion, tomato, and parsley.
  6. Add vinegar, lemon juice, olive oil, black pepper, and salt. Mix well.
