Alinazik Kebab: The Secret of an Exquisite Flavor

Today, I will share with you the original recipe of Alinazik Kebab, a delightful delicacy from Turkish cuisine. Alinazik kebab, particularly hailing from Gaziantep cuisine, tantalizes the taste buds with its unique flavors.
Bringing together the exquisite taste of eggplant and the perfect harmony of meat, Alinazik kebab has become a favorite recipe among food enthusiasts. Here’s the recipe for Alinazik kebab:
Ingredients
- 500 grams of lamb meat (boneless or cubed)
- 3 large eggplants
- 3 cloves of garlic
- 1 cup of yogurt
- 2 tablespoons of butter
- Salt
- Black pepper
- Olive oil
Preparation of Alinazik Kebab
- First, make several incisions with a fork or knife on the eggplants. Then, place them directly on the fire or in the oven to roast. Make sure to roast the eggplants thoroughly, allowing the skins to darken and the flesh to become soft. Roasting them for about 10-15 minutes should suffice.
- Transfer the roasted eggplants to a bowl and cover them with plastic wrap. This will allow the eggplants to steam, making it easier to peel off the skins. After resting for approximately 10 minutes, peel off the skins.
- Mash the peeled eggplants with a fork or use a blender to puree them. Once mashed, add grated garlic, salt, and olive oil to the mixture. Stir well and set it aside.
- In the meantime, marinate the cubed lamb meat with salt and black pepper. Let it rest in the refrigerator for about 15-20 minutes, ensuring that the meat absorbs the flavors.
- Melt the butter in a frying pan and add the marinated meat. Cook the meat over medium heat, stirring occasionally, until the juices are released and absorbed, approximately 15-20 minutes.
- Remove the cooked meat from the heat and drain any excess oil using a strainer.
- Spread the eggplant puree on a serving plate and place the cooked meat on top.
- In a separate bowl, whisk the yogurt and spread it over the meat. Optionally, you can garnish it with melted butter and red pepper flakes.
