  5. When the dough has risen, tear off pieces the size of a mandarin and shape them into discs the width of a tea saucer using your hands. Roll them up, giving them the shape of an açma by twisting them left and right.
  6. Prepare all the dough in this way.
  7. Then, place the açmas on a baking sheet lined with parchment paper and brush the tops with egg yolk.
  8. Let them proof in the tray for 15-20 minutes, then bake in a preheated oven at 200 degrees Celsius (390 degrees Fahrenheit) until the tops turn golden brown.

  1. Make sure the ingredients are at room temperature.
  2. The milk should be warm but not hot; otherwise, the dough won’t rise.
  3. The dough should have a soft consistency, sticking lightly to your hands.
  4. Cover the dough thoroughly and let it rest for approximately 30-40 minutes for proofing.
  5. After shaping the dough, let it proof in the tray for 15-20 minutes before placing it in the oven; bake until the tops turn golden brown.
