Difference Between “Sac Tava” and “Kavurma”

“Sac tava” and “kavurma” are both delicious dishes from Turkish cuisine, but there are some significant differences between them:

Cooking Method:
“Sac tava” is a dish cooked quickly over high heat. It involves rapidly mixing meat, vegetables, and spices in a hot pan.
“Kavurma,” on the other hand, has a longer cooking process and is often made by adding hot water to soften the meat. Therefore, “kavurma” employs a slower cooking method.

Sac Tava

Meat Cutting:
For “sac tava,” the meat is usually cut into smaller pieces than diced meat.
For “kavurma,” the meat is typically diced.
Ingredients:
In “sac tava,” vegetables like onions, peppers, and tomatoes are used alongside the meat.
In “kavurma,” usually only meat and some basic spices are used.

“Sac Tava” Recipe

Preparation Time: 15 Minutes

Cooking Time: 25 Minutes

Total Time: 40 Minutes

Servings: 4 People

Ingredients:

750 grams of lamb meat, diced slightly smaller than cubed (You can also use beef, such as fillet or sirloin.)

1 finely chopped onion

2-3 peeled tomatoes

4 small diced green peppers (Those who like it spicy can use hot peppers.)

1 small diced red bell pepper

Red pepper flakes or paprika powder (optional, to taste)

1 teaspoon black pepper

2 teaspoons salt

A small amount of lamb tail fat for those using lamb meat (optional)

1/2 cup vegetable oil

100 grams of butter

Instructions:

In a wide sauté pan, heat the lamb tail fat (optional) and vegetable oil over high heat until hot. Keep the heat high throughout the process.

Add the diced meat to the pan and sauté for about 10-15 minutes until the meat releases its juices and then reabsorbs them. If you are using beef, you can also add a small amount of lamb tail fat.

Enhance the flavor of the meat with melted butter. Then add the chopped onions and continue to sauté for 1-2 more minutes.

Now it’s time to add the green and red bell peppers. Sauté them for an additional 1-2 minutes.

Add the peeled and cubed tomatoes to the pan and sauté for another minute.

Stir in the spices, mix well, and turn off the heat. Let the dish rest for about 10 minutes.

Serve hot and garnish with your choice of sides such as rice, bread, or yogurt.
