- 1.5 teaspoons salt
- 1.5 teaspoons black pepper
- 1 teaspoon red pepper flakes
- 1 cup boiled chickpeas
- 1 handful chopped parsley
Tomato and Mint Sauce:
- 1 tablespoon tomato paste
- 1 cup water
- 1 teaspoon dried mint
For Garnish:
- 1 cup whipped yogurt
- 1 clove garlic (crushed)
Stuffed Zucchini Recipe:
- Wash the zucchinis and cut them in half lengthwise, then use a fork to shape the insides. Place the removed zucchini flesh in a separate bowl and keep the ends aside to place on top later. Fry the zucchinis in hot vegetable oil until they become slightly tender.
- In a separate pot, sauté the finely chopped onions in vegetable oil until they become translucent. Add the ground beef and continue to sauté until the meat releases and absorbs its juices.
- Add the tomato paste and sauté until its raw smell disappears.
- Stir in the salt, black pepper, and red pepper flakes. Add the boiled chickpeas and chopped parsley, then mix everything together and remove from heat.
- Stuff the fried zucchinis with the prepared minced meat mixture and cover each with the reserved zucchini pieces. Arrange the stuffed zucchinis in an ovenproof dish.
- For the tomato and mint sauce, mix the tomato paste with water and add the dried mint. Pour this sauce over the zucchinis in the dish.
- Bake in a preheated oven at 190 degrees Celsius for 30 minutes.
- When serving, garnish with whipped yogurt mixed with crushed garlic and drizzle some of the tomato-mint sauce from the baking dish on top.
