Ingredients
- 2 cups fine bulgur (for köfte)
- 1 cup semolina
- 1 tablespoon flour
- 3 cups boiling water
- 1 tablespoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon cumin
- Tomato paste
- Pepper paste
- Garlic
- Sunflower oil
For bulgur köftesi:
- Place the bulgur and semolina in a large bowl. Pour boiling water over them and cover the bowl. Let it rest for 20 minutes.
- Add black pepper, paprika, cumin, salt, a little tomato paste, and pepper paste to the rested bulgur.
- Then knead the mixture and sprinkle a small amount of flour on top. Continue kneading by adding a few drops of water.
- After kneading the dough thoroughly, shape it and place it on a tray sprinkled with flour.
For the sauce:
- In a saucepan, put sunflower oil, authentic pepper paste, tomato paste, and crushed garlic. Turn on the heat and sauté until a wonderful garlic aroma comes out.
- Add the boiled bulgur water to the saucepan and simmer a little longer to increase the amount of sauce.
- Once the sauce cools down, squeeze half a lemon and stir.
Fellah Köftesi is ready! When serving these delicious köftes, you can drizzle them with garlic sauce and serve them with lemon slices on the side. Enjoy your meal!
